This egg muffin recipe comes from Heather and her Multiply Delicious blog, where she posts plenty of paleo recipes. Not all of her paleo recipes are vegetarian, including this one (just leave the meat out) but there are plenty to choose from. These paleo egg muffins are made with carrots, spinach, red bell pepper and basil. I added diced onion, which made them even more delicious. Of course you can experiment and add your own favorite veggies and herbs to the muffin mix. They really are easy to make and convenient for breakfast or lunch.
